Avocado + Pea Smash

Another go to Breakfast or Lunch

INGREDIENTS

2 slices of Wholemeal Bread (from a bakery freshly baked)

1 tsp hemp seeds

1 tsp chia seeds

2 soft boiled eggs

For the mash:

A ripe avocado

1/2 cup cooked green peas

1 tbsp olive oil

Juice of 1/2 a lime

Salt and pepper

  1. Steam or boil half a cup of peas

  2. Toast the 2 slices of bread

  3. Soft boil the eggs (4 mins 30 seconds is my go to!)

  4. Smash the avocado, peas, lime juice together with a fork then add salt and pepper to your taste.

  5. Spread the mash on top of the toast, sprinkle the chia and hemp seeds and top both pieces of toast with a soft boiled egg.
